Why Napolitan? 

Upon returning to Hobart after several years away, I couldn't find a pizza like the ones I'd tasted overseas. There was something different, the bases smelled better, the sauce was sweeter, it was lighter and easier to digest. This started my 5 years of learning and testing, making thousands of pizzas at home until I felt I was begging to get it right. 

The original idea was to cart around a full sized brick oven, but these are HEAVY, so after extensive testing we have found a portable oven which produces great results. 

I now feel ready to share this with you all.

I hope you enjoy your first taste of Naples as much as I did.
